Gaby Toral

Bio

Gaby grew up in Matanzas, Cuba, and immigrated to the U.S. in 2011. She is pursuing a B.S. in Nutrition, Dietetics at the University of Texas at Austin. Gaby is working toward becoming a Registered Dietitian and aims to provide prenatal and neonatal nutrition care to women in underserved communities and infants in the NICU. As a research affiliate in the Department of Pediatrics at UT Dell Medical School, she evaluates the factors affecting Hispanic families with young children facing food insecurity. During her work at Austin Public Health WIC, she assisted nutritionists and lactation consultants in providing Spanish consults to pregnant women and young children. She also managed a volunteer project providing weekly English lessons via Zoom to elementary students in Ecuador, and taught English to a class of 1st graders. In her free time, she enjoys reading, running, gaming, and going to the park with her cute dog! Gaby strongly believes in the importance of nutrition and education and is excited to help students better navigate the U.S. education system.
